I cannot believe I am responding to this because I never cook but if I do it has to have like 2 steps or maybe 3 max. So, I am brushing or spraying olive oil on veggies, esp. root veggies and roasting them in the oven.
It is super easy to add veggies to pizzas- even the frozen ones.
And I throw quinoa in with my miso soup or tomato soup- any soup really. Or put spaghetti sauce on it. Or throw in some tomatoes, spinach, garlic, olive oil and whatever else I have. Or put soy milk on it and fruit for breakfast.
I have tons of veggie cookbooks but those are the first things that come to mind. I am not very creative, I know.
