I was going to recommend roasting veggies too. It completely changes the flavor of some of the veggies you think you won't like, i.e., brussel sprouts (and I even use frozen ones which makes it easier). Mix with olive oil and salt and pepper and roast at a high heat (450) and stir occasionally. I do this with brocolli, cauliflower and others. It is so good.
The quinoa is so easy to make. Cook it like rice with a 2:1 ratio. Cook in chicken broth if you are wanting a savory dish, cook it in water if you want to do a cereal like Lucky suggested.
I think the key is buying veggies, washing, cutting and having them ready to go so it is easier. I know how hard it is to get as many veggies and fruits in our diet as we should.
