I have been covered with lots of tomatoes this week!
I've made tomato-basil soup..Pasta sauce.
Salsa.
And simple whole canned tomatoes.
All of which can be mixed with quinoa.
I really love stir fried yellow and green squash and onions on top of quinoa. Add a little shredded cheese if you want.
Yes ....even for breakfast!
