Default Yummy Cauliflower

Cauliflower is not normally my vegatable of choice, but this is delicious! And cauliflower is packed with vitamin C.

1 med. head of cauliflower
1/2 cup mayo or salad dressing (I used soy mayo to make it extra healthy)
1 Tbsp instant minced onion
1/2 tsp. dry mustard
1/4 tsp. salt
4 slices Colby cheese
Paprika

Cut cone shape wedge out of cauliflower core. Place caulifower and 1/4 cup water in 1 1/4 quart microwave proof casserole dish. Cover and cook on HIGH for 9 minutes. Drain. Mix mayo, onion, mustard, and salt. Spoon over top of cauliflower. Lay cheese slices on top. Cook uncovered on 70 POWER for one minute or until cheese is melted. Sprinkle with paprika.

I actually used a few different spices--fresh ginger, cumin...very yummy.

I had it last night and had to go back to the store today for another head of cauliflower for tonight. Put lots of garlic on yours...I swear, you'll love it!
