Confession time: the only meat thing I ever long for (after giving it all up 15 years ago) is my late mother's chicken-liver pate' spread. Full of butter, brandy, spices---SO wonderful on a thin slice of baguette, with thin-sliced sweet pickles. She only served it at Christmas parties, and even as a child I loved it. I used to make sandwiches with the leftovers! My brother and sister hated it, but Daddy and I would pretend to fight over it...
