I cannot believe I am responding to this because I never cook but if I do it has to have like 2 steps or maybe 3 max. So, I am brushing or spraying olive oil on veggies, esp. root veggies and roasting them in the oven. It is super easy to add veggies to pizzas- even the frozen ones. And I throw quinoa in with my miso soup or tomato soup- any soup really. Or put spaghetti sauce on it. Or throw in some tomatoes, spinach, garlic, olive oil and whatever else I have. Or put soy milk on it and fruit for breakfast. I have tons of veggie cookbooks but those are the first things that come to mind. I am not very creative, I know. I look forward to ideas from the others- Take care

I like a simple steamed mix of veggies on top of pasta with some S&P and pamesean sprinkled on top, crushed red pepper if I'm feeling frisky. Go to chowhound.com and dig around in the home cooking section. epicurious.com and foodnetwork.com All have search options. Dr.Andrew Wiel as well.

I was going to recommend roasting veggies too. It completely changes the flavor of some of the veggies you think you won't like, i.e., brussel sprouts (and I even use frozen ones which makes it easier). Mix with olive oil and salt and pepper and roast at a high heat (450) and stir occasionally. I do this with brocolli, cauliflower and others. It is so good.
The quinoa is so easy to make. Cook it like rice with a 2:1 ratio. Cook in chicken broth if you are wanting a savory dish, cook it in water if you want to do a cereal like Lucky suggested. I think the key is buying veggies, washing, cutting and having them ready to go so it is easier. I know how hard it is to get as many veggies and fruits in our diet as we should.

Oh, and I couldn't believe how easy pesto sauce is to make. I love it, but hadn't made it from scratch because I thought it was a big production. WRONG. It was very fast and easy and tastes wonderful. This is also another thing many non-vegetarians absolutely love.

I have been covered with lots of tomatoes this week!
I've made tomato-basil soup..Pasta sauce. Salsa. And simple whole canned tomatoes. All of which can be mixed with quinoa. I really love stir fried yellow and green squash and onions on top of quinoa. Add a little shredded cheese if you want. Yes ....even for breakfast! You go girl!!!!!!!!! Nancy
