Default Atlantic Smoked Salmon

With Christmas and the New Year done... it's time to think about the weight... So I'm thinking fish...

Does anyone have a delish recipe for Atlantic Smoked Salmon... something different without loosing the salmon taste...

EZD do you think I could use the Salmon in your Hokey Pokey dish???

Wattle,
I just love to eat smoked Salmon with thinly sliced onion rings, capers on a slice of Wasa bread. The salmon is fat enough by itself, it does not need any butter.

Hey Wattle - did you know that "Atlantic" salmon means it is farmed salmon? And did you know that farmed salmon is full of antibiotics, chemical feed and toxins? They even put red stuff in the fish food so their flesh turns salmon color, cuz the farmed fish don't eat their natural diet which makes wild salmon salmon colored. And furthermore, most salmon farms are major environmental hazards?

Okay, I'm done preaching. And if you can't get wild salmon over there in Oz I apologize! I'm in the Northwest (of the States) where salmon and their habitats are a huge part of the culture.

Kudos for you to look to fish for improving your health - it's really good stuff! (well, most of it..._

I'm with u MOW. I don't like any but our Pacific NW Salmon. YUUUUUM Dad used to smoke it in a Little Joe Smoker, to die for!!!!

Unfortunately MOW is right Wattle. I also saw salmon farms when I was in Tassie ... they send down divers to haul out the dead fish, and beacause there are so many fish crammed in such a confined space, their excrement creates water quality/pollution problems not just round the pens but in the whole bay.
Having said that, I had lots of salmon over Christmas.
Why not try buying a couple of salmon steaks and poach them in milk...... I first had that when I was in Ireland a zillion years ago. Just add some pepper and herbs to the milk if you want. Can also poach it in white wine......... but I don't any more as I used to finish off the three quarters left over in the bottle.

WOW.... well this is all new to me... and trust me have totally taken in all on board... but unfortunately I did bake the "Atlantic" salmon last night for dinner and YUK... was so dry...

Promist to keep to the Pacific in future and Rags thanks for the recipe.. I'm sure by poaching in the milk would prevent the fillets from drying out..
