What is pepper jelly? WONDERFUL! It's a fiery-sweet jelly made with green peppers and jalapenos. Good on top of a cracker with a bit of sharp cheddar cheese, and carnivores put it on ham and beef as a relish. I've stirred it into curry, and used it on top of a Roquefort cheese ball. I suppose it's a Southern-USA thing? My sister lives near London and says she's only seen it once, in Harrod's food halls, over there. When I go to visit her we make several jars of it for her to give away at Christmas, and it's a hit with the Brits! Here's the recipe, just for you, Boopers:
PEPPER JELLY 1 cup chopped bell pepper 1/4 cup chopped jalapeno peppers (remove seeds before chopping) 1.5 cups apple cider vinegar 6 cups sugar 4 ounces commercial fruit pectin 4-5 drops green food coloring Puree peppers and vinegar in blender with 1/2 cup sugar. Mix everything except fruit pectin and bring to a boil. Boil for 30 seconds. Turn off heat, stir in pectin and coloring. Pour into small jars and let cool until set.

I made it with Habanero instead of jalapeno peppers once. Not knowing just how hot those puppies were. Cleared out the house and I was teared up for days. Thank dog I was wearing rubber gloves.
But it was great for those who like it REALLY hot. |
