Default CaptJBean's Galley full of Recipes

This is a great recipe as you can make ahead and freeze it... or bake it... or what ever...
I'll add more recipes to this site... and you will be happy with what I add... you'll be eating out of my hand!!!!

Ok... well here is a easy pie dough recipe...

4 Cups all purpose flour
1 3/4 cup shortening
1 tbsp. salt
1 tbsp vinegar
1 egg
1/2 cup water

With a fork, mix together first four ingredients. In a separate dish beat the remaining ingredients. Combine the two mixtures, stirring with a fork until all ingredients are moistened. Then with hands mold dough into a ball. Chill at least 15 min. before rolling into shape. (Dough can be refrigerated for a week or can be frozen. Store in a plastic bag in refrigerator. Makes 2-9inch double crust pies.) Hope you enjoy.

Ok my little loved ones... here is a wonder free bee... that will make a "I can't cook... seem like a genius"

I personally have to carful with iodized salt... so what I use has no salt... you try what ever you like... salted or whatever... I use it without...

One Pound Salt Free Butter One Jar of Strawberry Preserves [like you use for toast]
A few fresh strawberries.... depending on if you want individual butter plates or a really pretty butter arrangement... make sure it's clear glass... or it could be pinkish...

let the butter sit out for about an hour... don't let it get to soft... put it in a blender or mixer, food processor... start whipping the already made butter and start adding the strawberry preserve.. get it nice and pinky... please remember to unplug when taking a taste test... when you have it to the taste you like...
put it in the bowl you like... I used a lot of those darling little clear after dinner drink glasses... filled them up with the strawberry butter... Took a strawberry... fanned it out.. and displayed it out on top of the butter... you can put plastic over it with a ribbon and give it to neighbors or friends as a little gift for their Thanksgiving... Anyway... It truly only takes seconds. It will take longer to convince people to try it on their roll... but once they try it... you'll wish you had made more!!! If you don't like Strawberries... use peach or cranberries... or whatever... it's just that easy. Just dress it up a little. Oh... chill it... or freeze it after you put it in the bowl or dish [don't put the strawberry on when freezing] Before serving just set it on the table long enough so it thaws... I hope that wasn't to confusing. I guess it makes more sense to me. But, you'll get the idea.

Dump Cake
pre-heat over 350 degrees
9X13 inch pyrex or whatever
do not mix.... just dump in pyrex as directed.... and bake for one hour
20 oz crush pineapple.. juice and all
20 oz can cherry pie filling [we always used Thank You brand... if they still make it]
One box dry yellow cake mix
One Cup chopped nuts... [your choice... I'm allergic to walnuts... ask your guest?]
Two Sticks of Butter in pats all over the top...
Cut... and serve topped with a scoop of ice cream

So easy!!!!!

Guacamole
4 California Avocados, mashed
1 teaspoon season salt
2 tablespoons lemon or lime juice
1/8 tabasco
1 medium tomato chopped fine
combine and chill

I fiddle with this a lot and you can always go crazy... but its a good start...

Hope you had a great Christmas!!! Thanks for the recipes...........where are the rest???LOL have you given up writing your cookbook for lanquishing by the pool!!! OK.....go ahead and laugh......yes we are getting burried in 8 inches of snow for the second time this week........I better fo bake and make chile.............now where is that recipe????
