Default Christmas Ice-Cream Pudding

This is really good and very easy, I make it every year. Any leftovers can be kept in the freezer for months. There is some alcohol involved but this can be replaced by something else or just omitted. I must confess I have never left it out.



Christmas Ice-Cream Pudding

2 cups mixed dried fruits
100g glace pineapple, chopped
100g glace cherries, chopped
50g glace ginger, chopped
finely grated zest of 2 oranges
3/4 cup chocolate bits (good quality)
2 tablespoons brandy
2 tablespoons Grand Marnier

4 litres softened, bought vanilla ice-cream (good quality)

a mixture of berries
Grand Marnier
Icing Sugar

Mix together all ingredients, except ice-cream.

Mix this into the ice-cream now, mix well. Then line an extra large bowl with kitchen wrap, spoon in the mix and cover with more wrap. Place in freezer overnight and, when required, remove top piece of wrap, invert over a serving plate and wrap a hot towel around it to help it come out.

Serve with with berries which have been tossed in Grand Marnier and dust with icing sugar.

Oh yum! I'll bet this is fabulous! I have often just had plain ice cream with a wee bit of Grand Marnier over it, and even that is stupendous. This recipe looks like it sounds be called something trashy like "Frozen Orgasim" - whoa, did I just really say that?

50g = 1.8 oz

Never mind the rebirth, it looks like Tawny's still covered in the afterbirth.

Good call on the rounding up Tawny, I think that might make things a bit easier for our friends across the water.
