Default Conch Salad

Okay, I learned this one in the Bahamas and is the best native dish they have I think (other than there grilled red snapper or grouper...)

Dont ask me where you can find Conch, but if you can get your hands on it fresh, this is delicious!!

1 large, fresh Conch (hopefully already out of the shell!)
1 large sweet onion
1 tomatoe, diced
sweet bell pepper, diced (however much you like)
1 serrano pepper, minced (you can leave out if you dont like a kick)
juice of 1/2 of fresh orange
juice of one key lime
salt and pepper to taste

Dice the Conch (its very firm and chewy, so need a good knife)
Slice whole onion into slivers, dice tomatoes and bell pepper.
Mix all the ingredients and gauge the salt to taste.

We had this for lunch every day while we were there, and I miss it already! Its incredibly fresh and delicious... its very oniony and limey!

I remember conch fritters in Florida - even a shack of a restaurant, no seating, in the 'hood in West Palm Beach that sold nothing but greasy conch fritters - this was definitely a place for locals, not tourists. Oh, the memories....

Umm maybe a stupid question...is the conch cooked when you dice it? I've had conch chowder down at Conchy Joe's in FLA and that was delicious!

Pepper (by the way, love your name!),

The Conch is raw, but the lime juice "scorches" it.... almost cooking it. It LOOKS like its cooked, but its not. I am squeemy about fish, but you would never know this was not cooked. It was great fun to watch them make it.

Their other recipe is called "Conch Scorch" which is the same as the salad, but minus the tomatoes and peppers. Just Conch, onion, orange, lime, salt and pepper. YUUUUUMMMMO!
