Default Cooking with Kudzu

I bought some japanese Kuzu noodles, they were pretty yummy and most definitely took away cravings for about 3 hours. I just simmered them with some organic (Better than Bouillion) mushroom broth. Try it, you might like it.

Also, a question regarding using Kuzu starch as a thickener. The package says to heat it until it thickens. If I simply dissolve it in a bit of cold water and then add it to something would that be OK to eat? I guess I was just looking for an easy way to add it to my diet, not sure if this is OK to do or if anyone else has tried it.

Kuzu is very much like cornstarch or arrowroot when used in cooking from what I understand. So you can use it to thicken sauces, etc., but you won't get the same amount of "stuff" from that as you would from taking the supplement version. I will look for them though.

SM - I have not seen them either but I bet they are in the Asian section of the store.

Is Kuzu the same thing as Kudzu? I am pretty sure it is not the same thing at all. When I did macrobiotics for a while I bought some Kuzu as well to use as a thickening agent for soups, etc. I asked at the health food store if it was derived or related to the Kudzu plant, and they said it had no relation. But I have not researched it..... does anyone know for sure?

here is the skinny. kuzu and kudzu are the same thing.

the starch comes from the roots of the kudzu plant.

Oh that's fantastic news then! I wonder if it is taken from the part of the plant that has the "whatevers" that curb cravings. I have lots of Kuzu in the pantry!
