Default Delicious Amaranth Cereal Recipe - Another miracle food

I am enjoying the most wonderfully satisfying breakfast and my first time trying amaranth. Give it a try!

1 cup amaranth
1 cup organic apple juice
2 cups water
Cinnamon
Pinch of salt

Bring to a boil, reduce heat and simmer for 30 minutes until it is the texture of Cream of Wheat. I put some Rice Milk on it and it is SO good. Here is some information on amaranth, although the calorie count is wrong here compared to everything else I have read on the grain:

Amaranth has been discovered to be one of the most nutritious of all grains. This tiny yellow seed is packed with lysine, the amino acid that controls protein absorption in the body. Similar to quinoa, the protein’s biological value is almost perfect. It is extremely high in vitamins and minerals. Three and a half ounces of amaranth contains more calcium than a glass of milk, and a half cup contains less than 16 calories. This makes amaranth a rare grain that can be enjoyed by those who are determined to lose weight. It is sold exclusively in health food stores and is relatively inexpensive. Amaranth has a toasted sesame seed flavor and is delicious as a creamy breakfast cereal.

Hmmm, how do I describe that? Do you know what farina is? That is another name for it. It is more of a smooth hot cereal (as opposed to oatmeal being sort of chunky) with a texture to it. Can anyone else explain it better?

Isn't it like a pourable paste with a grainy texture. Cream of wheat cooked in mild is soft and squishy while warm. It will solidify once cooled. You can spread it on a deep cookie sheet, cut it into squares and roll it in sugar and cinnemon for an inexpensive dessert.
Sorry Lushy did not want to hijack your Amaranth tread.

Sorry just seeing this. Yes like polenta. Lori described it well except pourable paste does not sound very appealing!

You have to go back and read your first post on this thread... you sound exactly like a commercial for it! Its great!

I will be sure to try it as soon as I'm allowed to touch anything with carbs in it again.
