Default Delish Mushroom Pate

1 c. chopped walnuts
3 Tbsp olive oil
1 small onion, chopped]
1 clove, diced
1/2 pound chopped mushrooms
1 Tbsp. dry wine (I substitued red wine vinegar or just omit)
black pepper to taste
1 Tbsp tamari or soy sauce
1/4 c. Parmesan cheese
1 tbsp minced parsley

Toast walnuts in skillet at 250 degrees oven bake. Set aside.
Heat oil in skillet over med. heat an saute onion until soft. Add mushrooms and continue to saute to desired textrure. Drain excess liquid from pran.. Transfer to food processor --add nuts and remaining ingredients and process until smooth. Garnish with more parsley and serve with raw veggies or crackers.

Well, shit. I was going to make this with the CORRECT recipe Thursday night when I have my friend over for dinner but then I saw the cheese in it. She has/had cancer and her doc put her on the Blood Type Diet and she cannot have cheese, tomatoes, or root vegetables. I think we will have lentil soup in stead. Damn.

Soccermom, that looks awesome thanks! even as a meat eater the thought of what actually might be in store bought pate is enough to give me the creeps.
