These are great:
Couscous Dessert Balls 2 1/2 c. apple juice 1 1/2 c. water 2 c. couscous 1-2 pinches salt 1 1/2 c. almonds, walnuts or pecans 1 tsp. vanilla or almond essence Bring juice, water couscous and salt to a boil. Cover and cook low heat 10-12 minutes or until liquid is absorbed. While cooking couscous, dry roast almonds, walunuts or pecans. Rinse them ina strainer, then place them on a baking sheet in 225 degree oven. Stir occassionally. Roast 8-12 minutes. They will smell very nutty and be lightly golden when done. Pour nuts into large bowl. Reserve one nut half to put on top of each ball. Chop the remainder of the nuts. Add nuts to couscous and vanilla or almond essence in the pot. Let pot sit, covered, 10 minutes, then spoon into a large glass bowl. Fluff it up so it is not packed. Wet hands and have a bowl of cold water on the counter to dip your hands in. Make 1-inch couscous balls and place on serving platter with 1 toasted nut half on top of each ball. |

My grandma always made a lamb cake. You have to have a cake mold in the shape of a lamb and then you bake it with a white pound cake recipe and then frost it with white frosting and sprinkle it all with coconut. I used to love that cake.

Thanks guys!! I should have warned you that Betty Crocker I'm not!!! I tried to make a custard pie last night, and it was a huge disaster!! So anything that requires a little skill/talent is out!

I just made this:
Banana Cream Cheese Brownies Serves 12-16 INGREDIENTS: 1 store bought brownie mix for the filling: 8-ounces cream cheese, room temperature 1/3 cup light brown sugar 2 small or 1 large ripe banana(s) 1 large egg 1 tsp vanilla extract buttered 9 x 13 -inch baking dish PROCEDURE: Preheat the oven to 350 degrees and grease a 9 x 13-inch baking dish. Use an electric mixer to cream the cream cheese with 1/3 cup light brown sugar and, when that looks nice and smooth, add the two small, or one large ripe banana and mix those until they're relatively smooth. Next, add one large egg and 1 tsp of vanilla and mix that until everything is nicely combined. Use another bowl to hand mix the brownie mix, according to the directions on the box, and then pour 3/4 of that into the greased pan. Spread that around and add the banana cream cheese mixture to the top of that....and spread that around the whole surface. Finally, use your spatula to help swirl the rest of the brownie mix over the top of that. Place the baking dish on the center rack of the oven but keep in mind that, because of the layer of the banana cream cheese, they'll probably take a little bit longer to bake than it says on the box. Use a toothpick test to check them for doneness, let them cool down a bit and slice and serve!
