Default Kale and Carrot Salad - YUMMO!!

I know a lot of folks would rather eat grass than raw kale, but I Love it. It's WAY good for you too!!
This morning I made up a salad that I'm eating at my desk now for lunch, and it's just divine!

Several leaves of kale, well- chopped (this is the best time of year for kale, winter frosts make it sweet and tender). About an equal amount of grated carrots.
For dressing I mixed olive oil, toasted sesame oil, fresh lemon juice, crushed clove of garlic, grated fresh ginger, tamari, salt and pepper, pinch of brown sugar. Mixed it all together. By lunchtime the dressing had tenderized the kale nad made it OH SO YUMMY!!

So buy a prepared sesame-ginger dressing and add it to kale and carrots!!

MOW...you're so right....kale is divine....it just needs two things to be perfect raw....chopped really fine & allowed to marinade in dressing for several hours....easy peasy and so yummy!

Here's a quick, delish soup with it......

Chop equal amounts of kale, leeks and onions and put in a pan with a slurp of olive oil, some bouillon powder and enough water to cover. Bring to the boil, then simmer for 15 mins......add cooked chickpeas and liquidise.....mmmmm.....a big bowl of minerals!!!!

Sounds good, i love kale. It is loaded with iron and is of course very good for us. anymore recipes for kale?

We eat Kale almost every night... I buy those huge bags and that is just part of our evening meal. The rest varies, but on week nights usually includes a good local fish and a salad.

That recipe sounds so good... have not thought about "not" cooking it!

For all you kale lovers, here's a tasty snack: Krispy Kale. Tear kale into bite-size pieces. Spread out on an oiled cookie sheet. Mist with cooking spray and sprinkle with sea salt. Bake in 400-F/200-C oven until crispy. A very nice, healthy alternative to crisps, chips, etc. Enjoy!
