MOW...you're so right....kale is divine....it just needs two things to be perfect raw....chopped really fine & allowed to marinade in dressing for several hours....easy peasy and so yummy!
Here's a quick, delish soup with it...... Chop equal amounts of kale, leeks and onions and put in a pan with a slurp of olive oil, some bouillon powder and enough water to cover. Bring to the boil, then simmer for 15 mins......add cooked chickpeas and liquidise.....mmmmm.....a big bowl of minerals!!!! Suze xx

For all you kale lovers, here's a tasty snack: Krispy Kale. Tear kale into bite-size pieces. Spread out on an oiled cookie sheet. Mist with cooking spray and sprinkle with sea salt. Bake in 400-F/200-C oven until crispy. A very nice, healthy alternative to crisps, chips, etc. Enjoy!
