Default Lamb breast

Hi

Not sure how many replies I'll get to this as I think lamb breast is more eaten in the UK rather than the US (but I am very happy to be proved wrong!!) I just had a good sort out in the freezer and found about 3 (we rear our own lambs so these are left over after all the other good bits have gone!) I often use them boned and rolled (stuffed) but these are whole with bones in. Anyone have a good recipe they can share??

I happen to love lamb but have never had lamb breast. I think it would be delish rolled with spinach and feta.

Yeah, yeah - that's the idea! I'll be trying those combinations definitely. It is very fatty but if cooked right the fat can be cooked out. I'll give it a try. Currently experimenting with a slow cook recipes, then chill the meat, then cut it into strips and breadcrumb it, then back into a quick hot oven. Serve with some sort of piquant sauce. A French recipe.

braised greek lamb breast

Brown seasoned meat in oven proof pan

add onion garlic saute a bit

add 1 tin tomatoes..broken up

add oregano and a pinch of cinnamon
toss in a 350 degree oven for an hour or more

when tender add spinach anfd feta

warm through

serve on rice

MMMm.... sounds yum. I'll rummage around and see if I have got another breast piece. I am sure I will have. I tend to get left with those but they are really tasty if cooked well.
