What do I do with it? I have a turkey breast , rice and mixed veggies.

Baby Belle,
It goes well with curried rice . Just cut some fresh slivers into the rice before serving and dump a spoon of butter into it and voila, you're done.

Good suggestion Lori. Cube and mix with the rice. Or if you had an avocado you could make a simple salsa (aren't you the salsa queen SB???) and put on the chicken and rice.

Eat the turkey, rice and veggies.

Then run big hot bath, sit in bath and devour mango. Nothing better.

Crank up the grill or BBQ - cut mango in half as best you can remove the pit (leaving the skin) and grill the flesh along with the turkey breast .... serve with a rice salad... yum

STuff the breast with the mango, pine nuts and rice (and fresh herbs) and tie it up and roast - slice vertically when serving.

Default lunch today

Hi guys
I have new love.....the mango!
For lunch today I
cooked about
1 cup red, green and yellow peppers and about 4 green onions all chopped in a little olive oil.
To that I added
1 1/2 cups cooked rice and 1 can drained black beans.
a dash of cummin and chili power
Cooked a very short while and then
added about 1 cup chopped mango.....Heaven
Topped with small amout of cheese

The rice I used is Lundberg Jubilee Gourmet Blend of whole grain brown rice.

I feel like the chick in the elevator on tv telling everyone what she had for dinner!
