Miso Happy Salmon
ok, this is so easy that its ridiculous:
take a nice piece of salmon and put on a heavy slather of miso (I used white miso in this case). Then pan fry the salmon to medium rare and that's it. it will develop the most lovely crust.
note: if you overcook salmon to the point that it is dry, you will go to hell!!!! it's just wrong!

I like to put this on a bed of arugula scattered with a few chopped tomatoes, green onions, maybe some daikon radish. dressed with a lime/wasabi/soy vinaigrette and you are good to go!
