Default Quinoa with Leeks and Shiitake Mushrooms

Quinoa with Leeks and Shiitake Mushrooms

3 cups vegetable broth
½ tsp. salt
1 ½ cups uncooked quinoa, rinsed
3 T chopped fresh flat-leaf parsley
3 T olive oil
¼ tsp. fresh ground pepper
3 cups thinly sliced leek (about 2 large)
4 cups thinly sliced shiitake mushroom caps
1 ½ cups chopped red bell pepper
¼ cup dry white wine
½ cup chopped walnuts

Place broth and salt in large saucepan; bring to a boil. Stir in quinoa. Cover, reduce heat and simmer 15 minutes or until water is absorbed. Stir in parsley and pepper. Heat oil in large nonstick skillet. Add leek; sauté 6 min. or until wilted. Add mushrooms, bell pepper, and wine and cook 2 min. or until vegetables are tender. Stir into quinoa. Top with walnuts. Serves 4

Seriously - what if I wanted to make this but know if I had wine around I'd drink it, what to do? Is there a good replacement? How integral is wine to such recipes?

MOW,

There is "cooking wine" that my mom used to use. It really works well in recipes but you couldn't drink it if you life depended on it!!

You could try some Mirin which is Japanese cooking wine - made from sake but not good to drink - great for cooking. If you do, DO NOT buy it at a grocery store or oriental market - that has sugar and salt in it and tastes like garbage. Buy it at an organic food store. Eden makes a pretty good one. It is good. I cook with mirin a lot.
