Default Really great Hip Chick Recipe-Tempeh Burritos

These both come from the Hip Chick's Guide to Macrobiotics and they are both very yummy.

Tempeh Burritos
1 8 oz package of tempeh
2 cups water
1/2 cup shoyu (organic soy sauce)
3 T mirin (I didn't have this so I didn't use it)
1 dash of brown rice vinegar
Toasted sesame oil or light sesame oil
1 small onion, diced
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
Tortillas
Soy cheese and tofu sour cream (and you can use the dairy stuff instead, obviously.)

Cut tempeh in to 4 chunks and bringt a boil w/ water, shoyu, mirin and brown rice vinegar. Let simmer 20 minutes. Set aside.
Meanwhile, over medium heat, coat a skillet generously with oil. Saute onion with salt until onion is translucent.
Crumble up cooked tempeh into bits like ground beef and saute with the onion. The tempeh should be well seasoned, but keep the cooking liquid just in case you would like to
add a little more later on. Stir in chile and garlic powder. Allow the whole concoction to cook for about 5 minutes. The tempeh should absorb lots of the oil and may even get a little crispy.
Warm a tortilla in another skillet. Add "beef" and some grated cheese. Wrap tortilla around filling and let warm in the skillet so the cheese melts. Serve with sour cream and/or guacamole.

I had this book from the library and I don't know how I missed these recipes. Cannot wait to make this.
