A friend sent me a recipe for shrimp and scallop posole---a very light, flavorful soup with lots of cilantro, hint of lime...wonderful, and even better the next day when the flavors "marry." I think this came originally from Bon Appetit magazine:
SHRIMP AND SCALLOP POSOLE 1 T olive oil 1 cup chopped onion 3 garlic cloves, minced 3 cups bottled clam juice 1 15-ounce can white hominy, drained and rinsed 1 cup commercially-prepared salsa verde (tomatillo) medium or mild 2 T finely-chopped sundreid tomatoes in oil 1 T finely-grated lime peel 1 lb uncooked large shrimp, peeled 1 lb large sea scallops, halved 4 T chopped cilantro, divided Heat oil in large skillet and cook onion about 5 minutes. Add garlic, stir about 30 seconds. Add next 5 ingredients, simmer 5 minutes. Cool slightly (or can refrigerate for several hours at this point.) When ready to serve, bring soup to simmer, add 3 T cilantro and seafood. Simmer just until seafood is opaque, about 3 minutes. Season with salt and pepper. Divide into 6 bowls and sprinkle more cilantro on each.

hi teardrop.. the way i like to cook them is take a 1/2 teaspoon of mince garlie and butter.put all into the pan and cook away. it comes out sweet. and they say it good to get couplea in the mood..and it does work...lol..good luck and have great day
