Default Very interesting Deviled Eggs....

Roasted Red Pepper Hummus Deviled Eggs.. (don't knock it till you try it, really!)

I just made an amazing alteration to my old favorite, deviled eggs. I am trying to cut out bad fats, so I wanted to try this and it was DELICIOUS! Great Protien from the eggs and good carbs and fats from the beans and olive oil.

Hard boiled the eggs, as usual. Slice in half and discard the yolks.

Prepare Red Pepper Hummus

(2) 15oz can garbanzo beans (chick peas), drained
2T fresh Lemon (more if you like it more tangy)
1T Lemon Pepper
1T Sea Salt
1T Cumin
1 Clove of Garlic
1/2 cup GOOD olive oil
1 8oz jar of Roasted Red Peppers (I saved a bit and chopped as a relish to top the dish with)

Put all ingredients in food processor, adding the oil last and slowly.

Spoon in mixture and top with Red Pepper Relish.

GOOD and GOOD FOR YOU!!

MedMama, that sounds divine. I never met a deviled egg I didn't like, and this could become a favorite. Here's a recipe I made up for a luncheon last spring, that got raves; it does use the yolk, though, so not as healthy as yours!

Ginger Wasabi Deviled Eggs

7 eggs, hard-boiled and cooled
3 T wasabi mayonnaise (or regular mayo mixed with good blob of wasabi paste)
2 tsp pickled sushi ginger, finely minced
Dash of soy or tamari sauce

Red caviar or crab roe, or small boiled peeled shrimp, for topping

Remove yolks from eggs and mash with other ingredients. Discard 2 of the egg-white halves and stuff the remaining dozen with mixture. Top with desired topping (or sprig of parsley) and chill.

I have some really good hummus from Costco I need to eat so I am going to try this but I am going to try and mix it with the yolks. FYI, the yolks contain many nutrients that us drinkers really need. Do not believe the cholesterol hype around them, they are good for you.
