Cuban Style Sea Bass

Description:
Sea Bass cooked in a robust salsa.
Other: Ingredients:
Time:
30 minutes prep, 20 minutes cook time.
Difficulty:
I did it, therefore anyone can.
Serving Size:
4 servings
  1. 2 T. Extra Virgin Olive Oil
  2. 1.5 Cups thinly sliced white onion
  3. 2 T. (yes, Tablespoons) minced garlic
  4. 4 cups seeded, chopped plum tomatoes
  5. 1.5 cups dry white wine (I used chicken broth)
  6. 2/3 Cup sliced stuffed green olives
  7. 1/4 cup drained capers
  8. 1/8 teasp. red pepper flakes
  9. 4 - 6 oz. sea bass filets
  10. 2 T. butter
  11. 1/4 cup chopped fresh cilantro
Preparation:
  1. Chop and organize all the ingredients.
Instructions:
  1. Heat oil in large skillet over medium heat. Saute onions until soft. Stir in garlic and saute about 1 minute. Add tomatoes and cook until they begin to soften. Stir in wine (or chicken broth), olives, capers and red pepper flakes. Heat to a simmer.
  2. Place sea bass into sauce. Cover, and gently simmer for 10 - 12 minutes, or until fish flackes easily with a fork. Transfer fish to a serving plate and keep warm.
  3. Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.

sounds really nice, i wonder if its ok to use cooking wine or maybe not! stick to the chicken.lol

I believe what they say about the alcohol burning off. I just don't want any temptations right now bringing any wine at all in the house!
