Salad of Dandelion Greens with Almond Vinaigrette and Dried Ricotta

Dandelion greens have lecithin (good for your liver, acc. to
Determinator) and almonds have magnesium and a bunch of
other good stuff.
Other: Ingredients:
Time:
20 mins.
Difficulty:
Easy
Serving Size:
Serves 6
  1. 1# dandelion greens
  2. (about 10 cups loosely
  3. packed)
  4. 6 Tbsp olive oil
  5. 1/4 cup sliced almonds,
  6. toasted (divided use)
  7. 2 Tbsp red wine
  8. vinegar
  9. 1 tsp honey
  10. s & p to taste
  11. 1/4# ricotta salata
  12. cheese, cut into shards
  13. with a vegetable peeler
Preparation:
  1. Cut away tough stems from greens; trim any wilted, yellow
  2. or tough leaves. Wash and dry them. The greens can be
  3. prepared several hours in advance and kept, loosely covered
  4. w/a clean towel, in the fridge. The dressing could also be
  5. made several days in advance.
Instructions:
  1. Prepare the dressing: Combine olive oil, 2 T of the toasted
  2. almonds, vinegar and honey in a blender or small food
  3. processor and blend till smooth. add salt and pepper to
  4. taste.
  5. Assemble the salad: Place greens in a large bowl, season
  6. them with s and p, and pour dressing over them. Toss well
  7. and divide among 6 plates. Tope with remaining toasted
  8. almonds and shavings of ricotta salata.

OOOhhh yum! That is interesting too about adding the toasted almonds into the quisnart/ blender... what a great idea!

This sounds really delicious! Cant wait to try.

The dressing did not turn out as creamy as I would have liked, but you might try adding more almonds. The sweetness of the almonds and honey balances nicely with the slightly bitter greens and the salty/tangy cheese. It's a winner!
