Tim Tam and Strawberry Cheesecake

Indulgence at it's best ............
Other: Ingredients:

N/A
  1. Base = 1 x 250 gram packet of Tim Tams & 2 Tablespoons of melted butter
  2. Filling :
  3. 250 g Philladelphia Cream Cheese
  4. 1 Punnet of strawberries (or raspberries or blueberries etc....) approx 250 to 300 grams
  5. 1/3 Cup of caster sugar
  6. 300 ml thickened cream
  7. 1 Tablespoon of Gelatine
  8. 1-2 Tablespoons of hot water
Instructions:
  1. Base -
  2. Blend biscuits until fine crumbs are formed. Add butter and process until mixture forms a ball. Press into a 23cm (approx) springform tin. Cover base and sides, refrigerate.
  3. Filling -
  4. Process strawberries and sugar till well mixed. Add cream cheese and blend till smooth. Transfer to a mixing bowl.
  5. Sprinkle gelatine over hot water and whisk vigorously with a fork until dissolved. Beat into mixture until well combined.
  6. Add thickened cream and beat lightly till combined.
  7. Pour over base and refrigerate until set.

Sooooo....

Tim Tam = graham crackers ?

punnet = pint ? basket ?

caster sugar = granulated sugar ?

thickened cream = heavy whipping cream ?

Reminds me of the cooking show "Two Fat Ladies" I loved that show! Haven't remembered about it for along time. Thanks for the reminder and the recipe ! (think I'll look them up and see if they have shows available.)

YUMMMM, that sounds even better, it's always better with chocolate. Although don't think I will find TimTams here, so won't get to be satisfied 11 time in one night, good heavens ! But I can find some chocolate wafers covered in chocolate, is that a fudge filling in between. And powder sugar must make the texture even richer and smoother...my kids are going to love this one...

Stop right there MWO2! I don't think you want to be looking for chocolate wafers! It's more of a biscuity... okay "cookie".... consistency you want. I don't know what would be the American equivalent of Tim Tams.... I will google.
