    Whats for breakfast

    while a 7" (or so) pan is heating up:

    toss in a couple large chunks of butter.

    then lay down the potato slices nicely.

    salt and pepper

    put on a lid and let the potato cook gently for a couple
    minutes.

    then add craploads of smashed and chopped garlic, and the
    asparagus and the eggs.

    more salt and pepper.

    put lid on and gently cook til egss are barely set up.

    remove from heat and flip over onto a plate.

    at this point I put it in the fridge for about 4 minutes to
    help it set into a nice consistency and cool down.

        Is there a scientific reason for putting it in the fridge for four minutes versus say five or six minutes? I eagerly await your reply.

          4 minutes is approved by "Dr Dets culinary institute for illogical collusion and inexplicable modality"

                  Thanks D. I love the spanish torilla recipe, but tomorrow we will have left-over quiche, because I paid $19.95 a pound for gruyere cheese. Lordy, when did it get that expensive?
