    Salad of Dandelion Greens with Almond Vinaigrette and Dried Ricotta

    Prepare the dressing: Combine olive oil, 2 T of the toasted
    almonds, vinegar and honey in a blender or small food
    processor and blend till smooth. add salt and pepper to
    taste.
    Assemble the salad: Place greens in a large bowl, season
    them with s and p, and pour dressing over them. Toss well
    and divide among 6 plates. Tope with remaining toasted
    almonds and shavings of ricotta salata.

    OOOhhh yum! That is interesting too about adding the toasted almonds into the quisnart/ blender... what a great idea!

      The dressing did not turn out as creamy as I would have liked, but you might try adding more almonds. The sweetness of the almonds and honey balances nicely with the slightly bitter greens and the salty/tangy cheese. It's a winner!

            Hmmm....will try this one too....didn't know about the lecithin in dandelions, but know traditional herbalists recommend them for the bitter properties that stimulate the liver and bile production which benefits digestion and the liver.

            Almonds are high in calcium and great for diabetics to snack on for a protein boost.

            I feel like spreading knowledge today!
