Blend biscuits until fine crumbs are formed. Add butter and process until mixture forms a ball. Press into a 23cm (approx) springform tin. Cover base and sides, refrigerate.
Filling -
Process strawberries and sugar till well mixed. Add cream cheese and blend till smooth. Transfer to a mixing bowl.
Sprinkle gelatine over hot water and whisk vigorously with a fork until dissolved. Beat into mixture until well combined.
Add thickened cream and beat lightly till combined.
Pour over base and refrigerate until set.
