    Roasted Corn Salsa

    Remove outer leaves of corn and as much silk as possible without removing husk. Wash and place on baking sheet. Bake in preheated 375* F oven for 50 mins. Once roasted, remove from baking sheet and allow to cool. Peel, removing all silk. Cut kernals from corn. Corn should measure at least 2 1/2 cups. Combine corn with everything listed. Cover and chill. Best served within 3 days but lasts a week or so.

    Healthy - Very

    That sounds good.
    I'll add it to my recipes and try it in a few weeks when spring comes round.
