    Fresh Corn Fried with Bacon, Chipotle

    1. Slice corn kernels off cob. Fry bacon in a large skillet
    over medium-high heat until crisp, about 5 minutes. If pan
    looks very greasy, spoon off some bacon fat if desired.

    2. Stir corn into skillet and cook for 3 minutes. Stir in
    chipotle and salt. Add 2 tablespoons water and cook,
    scraping up browned bits from bottom of pan, and
    simmering until thickened. Stir in cilantro and serve,
    topped with a dollop of sour cream if you like.

    Yield: 4 servings.

    I dunno why the steps are numbered so oddly! This is the first time I've posted a recipe. I saw in in the NYT this morning and fully intend to cook it tonight. I think "4 servings" is optimistic, if it's as good as it sounds, "2 servings" might be more realistic.

        Ive been here over a nearly 2 weeks and have only just found the recipie section. YYYAAAYYY, im going to have some fun with new recipies. I love cooking!

              It was durn good!! I used green chiles instead of the chipotle, and I forgot to buy the cilantro so that got left out (although I love cilantro!). I had some roasted green chiles that were fairly hot, and I chopped up about 4 or 5 of them, large ones. Probably a small can (tin) of chopped green chiles, or half a can, would be about right, too. I still want to try the version with the chipotle in adobo sauce, though!

                    It would be good with pork chops! But since it already had a good bit of bacon in it, I had it as an entree with a small salad and some fruit.

                      I have a can of chipotle peppers in the pantry AND cilantro in the garden Just pulled chops and bacon out of the deep freeze and husbo can pick up the corn after work. Looking forward to this supper tonight Thanks WIP!
