2.Pour 1 tablespoon of olive oil into a baking tray and place in the oven for 5 mins
3.Meanwhile, chop half 1 kg pack of sweet potatoes and the 3 peppers. Place the sausages, sweet potatoes and peppers in the baking tray, and add a pinch of the dried herbs. Roast for 20 mins.
4.Add 2 red onions, peeled and quartered, to the sausages and veg and roast for a further 15 mins. Toss thoroughly.Cook for another 10 mins, toss again and ensure the sausages are browned.
5.Meanwhile, cook the brocoli in a pan of boiling water for 5 mins. Drain and serve with the sausage and veg
