1. Preheat oven to 180, gas mark 5
2. Butter a deep baking dish
3. Beat the butter, sugar and lemon rind together until well softened
4. Beat in the egg yolks one at a time
5. Fold in the sifted flour, alternating between adding the milk and the lemon juice.
6. In a seperate bowl, whisk the egg whites with a pinch of salt until they are stiff
7. Fold the 2 together and pour into the dish.
8. Bake for 40-45 mins
