    Creamy Asparagus Soup with Poached Egg

    Chop the tips off the asparagus and keep to one side for later
    Roughly chop asparagus stalks
    Gently fry onions, leeks and celery for 10 min until soft (not brown)
    Add asparagus stalks and stock. Simmer for 20 min with the lid on
    Remove from heat and blitz until smooth
    Season with salt & pepper
    Put soup back on heat and add asparagus tips

    Just before serving, poach the eggs until the yolk is still a bit runny

    Serve the creamy asparagus soup with a slice of toasted Rye bread and a poached egg floating on top.
