Chop the chillies, lemongrass, corriander, ginger and onion
Prepare the lime peel by removing as much white pith as possible and then chopping
Place all ingrediants in a blender and whizz to a fairly smooth paste
The raw ingrediants come to about 225ml(1 cup) so its enough for most small blenders
Keep in a sealed jar. Will last aprox a week
