    Enchilada Casserole

    Put a layer of flour tortillas, then a layer of corn tortillas.

    Put a little more enchilada sauce on top of torts.

    Add a layer of hamburger mix.

    Add a layer of shredded cheese. I like Monterey Jack/cheddar. Or "mexican blend".

    Add a layer of corn torts.

    Repeat layers until you have about a 40# casserole.

    I end up with a layer of flour torts, sauce and cheese on top. Any combination of tortillas can be used.

    Bake at 350 degrees for about 30 minutes or a few hours in the crockpot. The sauce will soak into the torts and the cheese just needs to melt.

    Enchilada Casserole

    Yumm.

    Enchilada sauce:

    2 sticks butter - 1 cup
    1 cup flour
    Lots of garlic powder (if using fresh, saute in the butter)
    Lots of chili powder - More than you think
    a bit of cumin (comino) - 1 - 2 tsps
    salt
    water (start with 2 cups and add more as it thickens until the right consistency)

    melt butter, make a roux with flour, add water. Put in rest of ingredients, stir. Add more water if thickens too much.

          I have never thought of using both kinds of tortillas. What a great idea. Will make it this weekend. Thanks!

              We call that mexican lasagne. Layers or tortillas, meat cheese and sauce.

                Thanks for sharing your ench sauce recipe. I tried to make my own and can it, but it doesn't taste quite right. I'm adding your recipe to my collection and will try it!
