    Jamaican Pesto

    this is inspired for my insatiable desire to fuse mint and
    ginger. for some reason you don't see them together
    much but they are great friends!

    throw a whole bunch of fresh mint in the blender, add a
    couple tablespoons of grated ginger, a crapload of fresh
    garlic, salt & pepper and while that is blending add olive oil
    until the desired consistency is achieved. Then taste and
    add citrus juice until happy. Then add a sweetener if
    desired. I have used maple syrup or agave nectar in the
    past to great result. Bear in mind it won't taste right until
    it's sat for a good half hour or better.

    this is fabu on chicken, pork, even tofu!

                det, sounds great, we've been on some what of a ginger jag here as of late....this works nicely

                  wow Det, that sounds good ... but sounds more Vietnamese to me than Jamaican. How about a schtickle of fish sauce? Yumm!

                      Yerright, it isn't pesto, but who cares......it sounds good.
                      Dunno about tasted pine kernels, but I may try grinding a bit of nutmeg into the mix, or maybe a juniper berry. That'd create an interesting taste.
