    Buckwheat Mega Muffins

    to the "dry ingredients bowl" add all the dry ingredients (d-
    uh) and also the fruit.

    in the wet ingredients bowl...ok, yeah you get it.
    Mix up the wet ingredients with a fork then dump into the
    dry ingredients and mix. if it's too dry add closer to a full
    cup of milk. the batter will be quite thick and gloppy, but
    that's ok.

    oh crap. I forgot to say preheat the oven to 375 degrees.

    oil the muffin tins and then ladle the mixture in using a
    tablespoon (anything bigger tends to make a mess).

    bake for 20 minutes. I actually check mine with a dry
    toothpick at about 16 minutes as I'm a bit of a worry-wort.

    you may try using different fruit and also adding some
    chopped dates. I've done this with fresh blueberries which
    was also great.

    I'm going to experiment in the future in a higher ratio of
    buckwheat flour....I'll let you all know how that works out.

    I bet you could even add some flax seed to make them even healthier. I have some whole buckwheat that I have yet to try. I might just grind it up and make these. Thanks D!

      darn fine idea! if you zap the flax sees in the coffee mill they will be right at home in these muffins.

        Det, if you use more BW flour and less wheat you will probably need to add some guar gum or xanthan gum (i use xanthan). It will help hold the muffins together, sans glutenous flour, otherwise they will end up cumbly.

        This sounds really good. I'm always looking for recipes I can adapt to gluten free, we all like buckwheat here, this is perfect! OTAY!!

          I dug around and found some kashi in the cabinet. Is it a big deal if the dry stuff is not real fresh? Like the flour and soda - I don't bake much.

              Oh. There's a difference? I wrote toasted buckwheat on the sticker (bought it bulk) but spelled it kashi.

                Kashi is a packaged cereal.

                Kasha is toasted buck wheat groats.

                I believe this is correct, although you never know with me...aka dingbat :-)

                  Just printed this, Det! My daughter/SIL and their (now) 4 kids eat only healthy, despite me bringing in the candy. I have an Apple Raisen Bran Muffin recipe they will TEAR UP before I leave the house, even tho I bring plenty to freeze for later. NOTE: My grands are (of course) beautiful, gorgeous, extremely healthy and vigorous children. (I could go onandonandonandon) you get it. But I'm always looking for things 3-8 yr-olds like! Thanks!

                      hahaha! OK I re-read what I wrote (with glasses this time) and it IS kasha. Gosh, I hope the actual baking isn't this hard! :H
