    Lemon Syrup sponge cake

    Combine butter, flour, sugar, eggs, milk & lemon rind in a bowl - mix well.
    Spoon mixture into prepared ring tin.
    Bake in preheated oven at 175C.
    Cool in tin for 10mins then onto a cake rack.
    Mix lemon juice & 1 tblspn sugar together until sugar disolved.
    Pour lemon/sugar syrup over the cake while it's still warm.

      I made this first thing this morning and just ate some for lunch. It's GREAT!!!!!

      Note: I used 1/2 cup Greek yoghurt instead of milk and dusted with icing sugar. Very tasty. Thanks.
