    Roasted Squash Sooup

    roast the squash - cool & scoop out insides. you need about 3 cups
    puree squash w/ water or stock.
    combine in kettle (I use crock pot on low) w/ orange juice.
    saute onion & spices until onion is soft.
    add mushrooms & garlic, cover & cook 10 minutes.
    add saute(scrape to get all those tidbits!) to squash & heat gently. (lengthy simmering matures flavors)
    correct seasoning & add lemon juice if desired
    serve topped w/ yogurt & toasted almonds

    i love the moosewood cookbooks, they remind me of my mama!

    thanks for the yummy recipe...i'm going to try it with butternut squash.
