    Happy Cookies (Good for the Brain)

    In a small bowl combine in this order:

    2.5 c walnuts ground in food processor
    2/3 c whole wheat pastry flour
    1t salt
    1/3 c flaxseed meal
    1/3 c carob chips
    1/2 c maple syrup + 2 Tbsp
    2 tsp vanilla

    spray large cookie sheet and preheat oven to 350 F
    drop dough on cookie sheet with spoon and flatten with fork

    bake 10-15 min or until golden brown checking often to prevent burning

    Let cool before removing from cookie sheet

    Makes 1 dozen

    They burn easily so use a doube-insulated cookie sheet and the middle rack of oven

    Enjoy with soy milk

          I know, I was thinking that as well Sheep. No milk or other binder? Just syrup? Again, I want to hear that luCKy made them herself and get a review.

          I know for a fact she does not know how to turn on her oven. She does not even know what appliances she owns. I am challenging you Duck. Make these and let us know how they turn out.

            Okay, so luCKy would not take me up on my plea to make these so I just did. They are rather tasty and will make an excellent breakfast in the morning with a cup of coffee. Very quick and easy to make. I had to bake them a little longer than she said to get them to set up.

                Yes, between the syrup and the flour it all comes together. My daughter and hubby won't stop eating them.

                      I am bumping this back up because I am on my third time of making these and they are simply tits!!! If you grind the walnuts enough they taste just like chocolate chip cookies and people do not know they are eating something so healthy. The batter takes maybe five minutes to make. The only thing is I needed to cook them about 10 minutes longer than the recipe says, and then turn off the oven and let them continue to cook in the heat so they gel up enough. This is a keeper. And sadly I know Duck has never made them.

                        Did you use carob or *whispers* real chocolate chips and is flaxseed meal just ground flaxseeds??.

                              Ok, I just made these. I had to go buy the special insulated cookie sheet. Then another trip for ingredients. Then I did not have the spray for the cookie sheet so another trip to the store. Now I have 15 made and the other 15 are in the oven. They do take longer to cook than the recipe stated. I guess the term "set up" is for bakers. I just know they were not done. And I used vegan carob!
