    Steamed Beets with Tarragon

    peel beets and half lengthwise
    slice them crosswise 1/8 " thick and steam on a rack over boiling water (I use my steamer basket in the frying pan), covered until tender, 10 minutes or so.
    toss with remaining ingredients & S&P to taste until butter is melted

    I swear they're good!!!

    They are so good for you and I thought I hated them (canned ones yes) but they are like a new find for me! Try it! It's a cheap easy recipe.

          I love beets too but cheat. I buy them @ either Safeway or Trader Joes (both have them) already peeled and steamed and ready to eat. They are high in fiber and super good. I have the beets marinating now in all ingredients except the butter because I don't have any and think they will be fine without.

          Can't wait to sample them in a few hours!

          EDIT: Forgot to mention I added persian cucumber!
