    Green Chicken Enchiladas

    Cook chicken and onion in lime juice and olive oil. Season with garlic salt, pepper and cumin. When chicken is cooked through, add can of chilies and cilantro blend. Bring to a simmer, sprinkle 1 T flour over mixture, reduce heat and let thicken, 3-5 minutes.

    Pour 1 C salsa verde evenly in the bottom of an 8" x 8" baking dish. Place one tortilla in the dish, spoon in half the chicken mixture, top with 1/4 C of cheese mixture and roll ending with seam side down. Do the same with the other tortilla. Top with the thickened juice leftover in the cooking pan, and 1/2 C of cheese. Bake 30 minutes or less in 350? oven.

    If Determinator is coming to dinner make sure you add plenty of garlic into the chicken mixture.

    I love those squeeze spices. I just used the lemongrass the other day in a stew. This sounds great and I am going to give it a try. Thanks!

      This sounds very good CF..I don't know a thing about squeeze blends, but I'm sure regular cilantro would be fine...I'll definitley try it
