Delicious baked salmon

Pour olive oil into baking dish
Place salmon fillet into dish
Rub olive oil into both sides of the fillet
Sprinkle lemon pepper and dill on top of the fillet
Top with feta cheese
Arrange kalamata olives down the center of the fillet
Bake at 400? F for 20 minutes

I wouldn't have thought of putting feta cheese on salmon - but that sounds good! I usually put a mixture of mayo & Dijon mustard w/dill or other herbs on top & bake, broiling for the last couple min. The mixture on top helps it to sort of brown & adds a tang to taste. Pretty good!
