Add salmon, mushrooms and shallot
Add lemon pepper and dill to taste
Cook on medium heat, stir frequently until salmon is done. Set aside
Melt the remainder of the butter
Using a pastry brush, spread melted butter on a baking sheet
Lay out one sheet of Fillo Dough. Brush with butter.
Lay another sheet of Fillo Dough on top of the first, brush with butter.
Repeat until all sheets of fillo dough are stacked and buttered.
Cut the fillo dough in half width wise.
Spoon half of the salmon mixture into the center of each fillo square.
Top with Feta Cheese.
Pick up each corner of the square, folding over the salmon mixture until covered.
Beat the egg white with a wire whisk until slightly foamy. Dip the pastry brush into the egg white and "glue" the edges of the fillo dough.
Repeat with the second square.
Turn over so the "glued" seams are at the bottom.
Whisk egg yolk and use Pastry brush to brush egg yolk over the top of each puff.
Bake at 350? F for 30 minutes.
Allow to cool 5 minutes before serving.
