    Tuna Lemon Pasta

    Coarsely chop the black olives and pine nuts separately. In
    a pasta serving bowl, combine the olives, pine nuts, garlic,
    parsley, basil and tuna. Mix gently, breaking up the tuna
    very slightly. Cook the pasta in salted boiling water till al
    dente. Drain the pasta well, and place it in the serving
    bowl. Dress with the lemon juice and olive oil. Season
    with S & P and mix well.

    from Pasta Fresca, by Viana La Place and Evan Kleiman,
    1988, William Morrow and Co., p. 176.)

            CS,

            I think I am going to try it only using canned chicken breast meat.

            Hubby is not a tuna fan, so I don't think it would go over well, but he will eat the canned chicken.

            It sounds really good to me.

              Hey Cindi,
              Let me know how it works with the chicken. You could alway use leftover chicken, too -- I always have a bunch of that in my freezer. Or even turkey. I really like the tuna and olive combo, and I am not even a huge fan of olives. It's just a nice staple recipe to have on hand.

                I'm thinking canned salmon would also work here. My hubby also won't eat tuna, and we both dislike olives. A recipe like this is a concept that can inspire many variations. Thanks!

                  That sounds really good. I think it would be great for make ahead lunch meals.

                  I also bet it would be delish with some sundried tomatoes added.

                          So glad you liked it! The sun-drieds sound like a nice addition. The recipe really is rather flexible. I like the base combo of ingredients but you can tinker based on what's in the house and in season.

                          It might also be nice with grilled fresh tuna, but that's pretty expensive (at least here in Ohio).
