Drain tofu (mine is sprouted) and marinade overnight in Thai Yellow Curry Sauce. I bought the brand Mai Pham from Lemon Grass Kitchen @ Whole Foods.

Put in skillet and saute.

In a different skillet, take frozen peas, carrots, and green beans (in a single bag from Trader Joe's) and heat.

Mix the 2 together and eat.

If you do not like things this spicy, mix the yellow curry sauce with coconut milk to mellow it out. Most people would probably do this but I did not have any and I like spicy hot stuff.

This seems simply and easy enough that next time I have an busy day full of clients I'll have it waiting and ready and then ask Hubby to SERVE it to me....
