    Split-Pea Soup - easy

    Heat bacon (or olive oil) on Medium heat in Large soup pot.
    Add diced onion, garlic, carrot, celery. Saut? until onions are translucent.
    Add dried split peas, and saut? for about one minute.
    Pour broth into the pot, add bay leaf, and bring to a boil.
    Cover and simmer an hour to 1 ? hours. (contrary to the 45 minutes suggested in the video)

    i do it this way, but with veg stock and no bacon...i also use ALOT of tarragon because i love it!
    i use more veg as well...and sautee everything until slightly golden for a more developed flavor.

      tarragon.... there's a thought. I usually am heavy with the thyme.

        I just made this with lots of extra carrots and celery, and added some thyme and hot sauce! It's really yummy, thanks for the idea and the recipe!

          Oh, the hot sauce. I add Cholula hot pepper sauce to everything -- including pea soup! thnx Ann, glad you enjoyed
