    Salmon stuffed peppers

    Roast peppers by your favorite method. I do mine in a toaster oven on broil, once the skin has blackened I put them in a container with a tight fitting lid and let them rest for 15 minutes. Then peel the tough outer skin, slice down one side and seed.

    Saute the salmon over medium heat until cooked. Season with your favorite seasonings I use lemon pepper and dill. Put in small bowl and flake with a fork.

    Saute the leek in 1 t. butter for about five minutes or until lightly browned. Mix with salmon.

    Add cream cheese to salmon/leek mixture. Stir until blended.

    Stuff peeled and seeded peppers with salmon mixture. Bake in low oven for 15-20 minutes.

      We have the best salmon here in Alaska, I will have to try it. It sounds yummy
