Saute onion in evoo till transluscent
stir in cayenne & ginger
add carrots & saute a little more
add potatoes and stock, bring to boil, simmer 15 min or until veg are tender
puree vegs with tomato juice and return to the pot
(blender - I got a new stick blender that rocks! does it right in the pot!)
stir in peanut butter until smooth
check sweetness and add sugar if necessary
add more liquid if you want it thinner
garnish with lots of chopped scallions and chopped roasted peanuts
